Apple Betty
4 cups sliced pared tart apples
1/2 cup orange juice
1 cup sugar
3/4 cup all purpose flour
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
Dash salt
1/2 cup butter
Mound apples in buttered 9 inch pie dish; sprinkle with orange juice.
Combine sugar, flour, spices and salt;
cut in butter till mixture is crumbly, and sprinkle over apples.
Bake at 375 degrees for 45 minutes or until apples are tender and topping is crisp.
Serve warm with Cream. Makes about 6 servings...
Warm Pasta Salad with Shrimp
3 cups uncooked farfalle (bow tie pasta)
1/4 cup fresh lemon juice
1 1/2 tablespoons Dijon mustard
1 teaspoon minced fresh garlic
1/4 cup olive oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Cooking spray
12 ounces medium shrimp, peeled and deveined
1 1/2 cups chopped fresh spinach
1 cup canned cannellini beans, rinsed and drained
1/4 cup minced red onion
2 tablespoons chopped capers

Preparation
1. Cook pasta according to package directions, omitting salt and fat; drain. 2. Combine juice, mustard, and garlic in a small bowl, stirring well with a whisk. Gradually add oil, stirring constantly with a whisk. Stir in salt and pepper 3. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add shrimp to pan; cook for 2 minutes or until done. Stir in spinach, cannellini beans, red onion, and 2 tablespoons capers; toss to combine. Add the pasta and juice mixture to shrimp mixture; toss. Preheat oven to 350 degrees. Spray a 9 inch pie pan with cooking spray...
put in 2 Tblsp. butter, and place in microwave for 30 seconds or so to melt.
Then layer in, over melted butter:
1 apple - peeled, cored, sliced
3 Tbl. maple syrup (drizzled over the top of the apples)
1/3 chopped pecans (sprinkled over syrup)
1/2 tsp. cinnamon (sprinkled over the pecans)
Mix until well combined:
1 cup dry pancake mix
1/2 cup milk
1 egg
Pour evenly over the apples/nuts in pie pan, and bake for 30-35 minutes or so until brown.
Invert onto a plate and cut into wedges, serve warm with maple syrup. Serves 8.
Whole Wheat Banana Nut Pancakes

Combine flour, cereal, brown sugar, baking soda, cinnamon, salt & nutmeg.
In a separate bowl combine egg, milk, banana, stir until well combined. Mix this into the dry ingredients and stir until just combined. Stir in the 1/3 cup chopped nuts.
Cook on a hot, lightly greased griddle using about 1/4 cup batter per pancake.
Top with syrup, banana slices, and additional nuts, if desired.
